Cranberry Streusel Coffee Cake (Vegan)

Ingredients

Cake:

  • 1/2 cup almond milk
  • 1/2 cup coconut yogurt
  • 1 teaspoon) apple cider vinegar
  • ~2 large apples, peeled and chopped or shredded in food processor or spiralized
  • zest and juice of one lemon
  • ~1 cup + 2 ½ tablespoons all-purpose flour
  • ~1 cup white whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tablespoon pure vanilla extract
Topping
  • Cranberry sauce
Oat streusel
  • 2 cups oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • Enough coconut oil for flakey consistency
Instructions
  1. Pre-heat oven to 350 degrees; grease a cake pan with non-stick baking spray
  2. Combine milk and vinegar; set aside
  3. Chop apples into ¼-inch cubes and in another bowl, mix with remaining lemon juice; set aside
  4. In a large bowl, whisk together the flours, baking powder, cinnamon and ginger; set aside
  5. In a separate large bowl, whisk together the milk and vinegar, granulated sugar, oil and vanilla
  6. Slowly whisk in dry ingredients just until combined; fold in chopped apple
  7. Pour the batter into your prepared baking pan
  8. put cranberry sauce on top
  9. then mix all ingredients on streusel and sprinkle on top
  10. Bake in the center of the oven for 35-40 minutes or until a skewer inserted into the cake comes out clean, if browning too fast, may have to use tin foil
