Ingredients
Cake:
- 1/2 cup almond milk
- 1/2 cup coconut yogurt
- 1 teaspoon) apple cider vinegar
- ~2 large apples, peeled and chopped or shredded in food processor or spiralized
- zest and juice of one lemon
- ~1 cup + 2 ½ tablespoons all-purpose flour
- ~1 cup white whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1 tablespoon pure vanilla extract
Topping
- Cranberry sauce
Oat streusel
- 2 cups oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 tsp cinnamon
- Enough coconut oil for flakey consistency
Instructions
- Pre-heat oven to 350 degrees; grease a cake pan with non-stick baking spray
- Combine milk and vinegar; set aside
- Chop apples into ¼-inch cubes and in another bowl, mix with remaining lemon juice; set aside
- In a large bowl, whisk together the flours, baking powder, cinnamon and ginger; set aside
- In a separate large bowl, whisk together the milk and vinegar, granulated sugar, oil and vanilla
- Slowly whisk in dry ingredients just until combined; fold in chopped apple
- Pour the batter into your prepared baking pan
- put cranberry sauce on top
- then mix all ingredients on streusel and sprinkle on top
- Bake in the center of the oven for 35-40 minutes or until a skewer inserted into the cake comes out clean, if browning too fast, may have to use tin foil
