Ingredients
Crust
2 cups spice cookies
1/2 cup sugar
6 tablespoons coconut oil
Filling
3 ripe avocados, peeled and pitted
1/2-3/4 cup lime juice
1/4-1/2 cup sugar
1 teaspoon vanilla
2 tablespoon coconut oil
4 tablespoons lime zest
pinch of salt
Directions
- Crumble cookies in a food processor. Mix cookies, sugar and coconut oil in a bowl. Press mixture into the bottom of a 12 inch tart or pie pan. Store in freezer to harden coconut oil.
- Place all filling ingredients in a food processor or strong blender. Blend on high until smooth and creamy. Adjust lime juice and sugar to taste. Fill crust with filling and smooth with a spatula.
- Freeze pie for at least 2 hours. Allow to sit a room temperature for about 10 minutes prior to cutting.
