Meatloaf with Mashed Potatoes and Swiss Chard (Vegetarian)

Ingredients

  • 1 cup almond meal
  • 1/2 cup grated carrots
  • 1/2 cup grated apple
  • 2 eggs
  • 1/2 cup canned diced tomatoes
  • 1grated yellow onion
  • 2 minced garlic cloves
  • 2 cups textured soy protein granules
  • 1/2 cup bread crumbs
  • 1/8 cup vegan bacon bits
  • 1 tablespoon aminos
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon poultry seasoning
  • 1 tablespoon dijon mustard
  • 2 tablespoons ketchup
  • 1/4 cup nutritional yeast

 

Directions.

  1. Preheat oven to 400.
  2. Line a loaf pan with aluminum foil.
  3. Mix in all ingredients in a bowl until a thick, meatloaf like consistency- salt and pepper to taste.
  4. Spoon mixture into pan and press.
  5. Spread a layer of ketchup or barbecue sauce over this, if you like.
  6. Bake 55-60 minutes or until inserted knife comes clean.

Mashed potatoes were made by boiling idaho potatoes and adding almond milk, veganaise, and coconut oil to taste (salt and pepper to taste)

Swiss chard was sauteed in coconut oil and a splash of balsamic vinegar was added at the end.
