Ingredients
- 1 can kidney beans
- 1 can black beans
- 1 can tomato sauce
- 1 can diced tomatoes
- 1 jalapeno pepper- chopped
- 1 red or green bell pepper- chopped
- 1/2 cup soy granules
- 1/2 cup corn
- 1/2-1 cup of any other chopped vegetable (zucchini, eggplant, squash)
- 1 onion chopped
- 2 garlic cloves minced
- 1 fresno chili pepper chopped
- 1 T cumin
- 1/2 cup cilantro chopped
- Dash of poultry seasoning
- Braggs aminos, Worcestershire, apple cider vinegar, salt, and pepper to taste
Directions
- Sauté onion in olive oil until soft.
- Add garlic, chopped bell peppers, and chili peppers.
- Add tomato sauce and diced tomatoes, let come to a simmer
- Add any other veggies.
- Add beans and soy granules, add more water if it gets too thick (granules can suck up a lot of water)
- Add corn keep stirring.
- Add seasoning and taste test , once all veggies are cooked- add cilantro and remove from heat
- Serve over rice with cheese, avocado, and sour cream. yummmm,
