Vegetable Chili (Vegan)

Ingredients

  • 1 can kidney beans
  • 1 can black beans
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 jalapeno pepper- chopped
  • 1 red or green bell pepper- chopped
  • 1/2 cup soy granules
  • 1/2 cup corn
  • 1/2-1 cup of any other chopped vegetable (zucchini, eggplant, squash)
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 fresno chili pepper chopped
  • 1 T cumin
  • 1/2 cup cilantro chopped
  • Dash of poultry seasoning
  • Braggs aminos, Worcestershire, apple cider vinegar, salt,  and pepper to taste

Directions

  1. Sauté onion in olive oil until soft.
  2. Add garlic, chopped bell peppers, and chili peppers.
  3. Add tomato sauce and diced tomatoes, let come to a simmer
  4. Add any other veggies.
  5. Add beans and soy granules, add more water if it gets too thick (granules can suck up a lot of water)
  6. Add corn keep stirring.
  7. Add seasoning and taste test , once all veggies are cooked- add cilantro and remove from heat
  8. Serve over rice with cheese, avocado, and sour cream. yummmm,
